GNT Unveils New Carrot-based EXBERRY® Brown Colours


GNT has extended its range of plant-based EXBERRY® colouring solutions with two new liquid-based browns.

EXBERRY® Shade Brown and EXBERRY® Shade Dark Brown are created from non-GMO carrot using physical processing methods. They can deliver an array of brown hues across a wide range of food products, including plant-based meat and dairy.

Both products provide excellent heat and light stability. EXBERRY® Shade Brown is also pH-independent between 2-7, while Shade Dark Brown shifts to a darker, more intense brown with increasing pH levels.

Under EU and UK regulations, both Shade Brown and Shade Dark Brown can be described on the ingredient list as “concentrate (carrot, caramelized carrot)”.

Christina Niehoff, Product Manager at GNT, said: “Our new EXBERRY® liquids open up further opportunities for manufacturers to achieve brown shades while maintaining completely natural ingredient lists. They are ideal for a variety of applications, including delivering warm caramel browns to dark chocolate browns in plant-based dairy as well as confectionery and savoury products. They are also extremely helpful when used to adjust the red colour shade in meat analogues.”

GNT’s range of brown colours also includes liquid-based options for beverages made with caramelised sugar syrup as well as powder-based colours created from caramelised carrot.
